  • Tomatoes - 10 pieces
  • Olive Oil - 4 tablespoons
  • Courgette - 2 pieces
  • Spanish onions - 2 heads
  • Chopped almonds - 1.8 oz
  • Balsamic Vinegar - 2 tablespoons

Step by Step guide

Step 1

Preheat the oven to 302°F. Cut the tomatoes in half, place them cut side up on a baking sheet, drizzle with oil, and roast for 1 hour.

Step 2

Slice the zucchini, cut the red onion into wedges, drizzle with olive oil, and grill in a grill pan for 5 minutes on each side.

Step 3

Transfer the cooked vegetables to a plate, drizzle with vinegar, season with salt, and sprinkle with chopped almonds.
