Ingredients
- Poultry - 1 piece
- Orange Bell Peppers - 21.2 oz
- Tomatoes - 10.6 oz
- Garlic - 2 cloves
- Dry White Wine - 2 fl oz
- Olive Oil - 1 fl oz
- Fresh basil leaves - 3 spoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Cut the peppers into eight pieces, removing the seeds, chop the tomatoes coarsely, and slice the garlic into thick slices.
Step 3
Cut the chicken into pieces.
Step 4
Pour oil into a large oven-safe pot. Add garlic and cook for 2 minutes, stirring constantly. Then remove the garlic from the pot.
Step 5
Sear the chicken until golden brown on all sides. If the pot is not large enough, sear it in batches. Season the chicken with salt and pepper.

Add the wine and let it simmer gently to reduce.

Add the tomatoes to the pot, cover with a lid, and cook for 5 minutes.

Add the bell pepper and simmer for about 1 hour over medium heat, stirring occasionally. Slightly crack the lid on the pot.
Step 9
Sprinkle the finished dish with chopped oregano.
Step 10
Serve the Roman chicken hot.
