Ingredients
- Semolina Flour - 2.1 oz
- Soy Milk - 13 fl oz
- Olive Oil - 2 tablespoons
- Salt - a pinch
- Nutmeg - to taste
Step by Step guide
Step 1
Place a pot over medium heat and mix the soy milk, olive oil, and a pinch of nutmeg. When the milk is well heated but not boiling, gradually add the semolina while constantly stirring to prevent lumps. Continue stirring the mixture over low heat for 3–4 minutes.
Step 2
Line a baking sheet with parchment paper and lightly moisten it with water. Pour the hot mixture onto the baking sheet and shape it into a layer about 1 cm thick, trying to smooth the top layer nicely. Let it cool for about 20 minutes.
Step 3
Preheat the oven to 392°F. Meanwhile, use a small cup or glass with a diameter of 4–5 cm to cut out circles. Gather the remaining mixture around the circles and form similar round gnocchi. Brush the gnocchi on both sides with vegetable oil and place them in the oven for 5 minutes, then flip them over. After another 5 minutes, do this again.
Step 4
Serve the Roman-style gnocchi hot.
