Romanian Cabbage Rolls
Ingredients
- White Cabbage - 1 head
- Salt - to taste
- Olive Oil - 3 tablespoons
- Garlic - 3 cloves
- Onion - 1 head
- Thyme - 2 teaspoons
- Lean Beef - 17.6 oz
- Pork Mince - 17.6 oz
- Long-Grain Rice - 2 tablespoons
- Ground Black Pepper - to taste
- Chicken Broth - 4 cups
- Baking Tomatoes - 1 can
- Sauerkraut - 17.6 oz
- Bacon - 6 pieces
- Bay leaf - 2 pieces
- Sour Cream - to taste
Step by Step guide
Step 1
Boil salted water in a large pot. Place the cabbage head in it and cook until the outer leaves are soft. This will take about 5 minutes.
Step 2
Remove the cabbage head onto parchment paper and take off the top two layers of leaves. Return the head to the pot and repeat until you have 20 soft leaves. Set the soft leaves aside, and you can use the remaining cabbage for another dish.
Step 3
Heat the oil in a skillet over medium heat. Add the finely chopped onion, garlic, and thyme. Cook until the vegetables are soft. Then transfer to a plate and mix with the pork and beef mince and rice. Season with salt and pepper to taste. Mix thoroughly. Place 1 tablespoon of the filling on a cabbage leaf (the amount of filling depends on the size of the leaves and may vary). Fold the edges and roll up the cabbage roll.
Step 4
Preheat the oven to 356°F. In a saucepan, mix the crushed tomatoes with the broth. Bring to a boil and set aside. Layer half of the sauerkraut and 3 pieces of bacon at the bottom of a baking dish, then arrange half of the cabbage rolls and pour half of the tomato broth over them. Season with salt and pepper.
Step 5
Layer the bacon, sauerkraut, cabbage rolls again, and pour the remaining tomato broth over them. Season with salt and pepper. Cover with aluminum foil and bake for about 2 hours. Serve the finished cabbage rolls with sour cream. Enjoy your meal!
