Description

Coq au Vin, the famous French rooster in wine: ideally, it should be Burgundy, but let's not be too pedantic. The key is to use a good quality wine. According to legend, even Julius loved this dish, but that's just a legend. Reliable sources attribute the recipe to much later times.

  • Rooster - 1 piece
  • Red Grape Juice - 25 fl oz
  • Onion - 1 head
  • Celery stalk - 2 pieces
  • Carrot - 1 piece
  • Garlic - 3 cloves
  • Olive Oil - 1 fl oz
  • Wheat Flour - 3 spoons
  • Shallot - 3 pieces
  • Champignons - 14.1 oz
  • Thyme - 4 sprigs
  • Parsley - 0.7 oz
  • Bay leaf - 2 pieces
  • Chicken Broth - 17 fl oz
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Bacon - 3.5 oz

Cut the rooster into breasts, drumsticks, thighs, and wings.

Sprinkle the finished dish with chopped parsley.

Coarsely chop the carrot, celery, and onion. Crush a clove of garlic.

In a saucepan, heat the wine with the vegetables and simmer for 5 minutes.

Then allow to cool completely. Pour the wine marinade over the pieces of meat, season with salt and pepper, cover with plastic wrap, and refrigerate for at least 8 hours.

Remove the meat from the marinade and pat it dry with paper towels. Reserve the marinade and vegetables.

In a large heavy-bottomed pot, sauté the bacon in olive oil.

Then place the meat in the pan and fry it for 8 minutes on each side until browned. Transfer it to a clean dish.

In the same pot, sauté the vegetables from the marinade for 10 minutes, then add the flour, stir, pour in the wine marinade, and bring to a boil, stirring constantly.

Add the minced garlic, roughly chopped shallots and mushrooms, thyme sprigs, bay leaf, broth, and meat. Cover with a lid and simmer on low heat for 30 minutes. Then, flip the meat and simmer for an additional 15 minutes.
