Royal Buckwheat Chicken Patties
Ingredients
- Onion - 1 head
- Ground meat - 17.6 oz
- Butter - 0.5 oz
- White bread - 3.5 oz
- Non-alcoholic sparkling wine - 1 fl oz
- Buckwheat Groats - 9.9 oz
- Carrot - 1 piece
- Wheat Flour - to taste
- Pickled Cauliflower - 1.4 oz
- Cucumber Brine - 1 fl oz
- Dijon Mustard - 0.4 oz
- Parsley - 0.2 oz
- Vegetable Oil - 1 fl oz
- Salt - to taste
Step by Step guide
Step 1
Prepare all the ingredients. Preheat the oven to 356°F.
Step 2
Soak the bread in mineral water and set it aside.
Step 3
Grate the carrot on a fine grater, then add it to the minced meat along with salt and soaked bread, slightly squeezed. Mix well.
Step 4
Chop the onion into small cubes.
Step 5
In a saucepan, heat the butter and 30 ml of vegetable oil.
Step 6
Sauté the onion, stirring, until golden brown.
Step 7
Divide the minced meat into portions, coat each one in flour, and shape into patties.
Step 8
In a saucepan with onions, add the buckwheat and sauté it for 1 minute.
Step 9
Pour the broth over the buckwheat, bring to a boil, then cover and place in the oven for 10 minutes.
Step 10
Heat a skillet with vegetable oil and fry the patties until golden brown on both sides.
Step 11
Place the patties in the saucepan with the buckwheat and return to the oven for another 10 minutes.
Step 12
Finely chop the parsley and cucumbers.
Step 13
Mix the cucumbers and parsley with the brine and mustard.
Step 14
Arrange the patties and buckwheat on a plate, and drizzle with cucumber sauce.
