Russian Forshmak
Ingredients
- White bread - 3.5 oz
- 10% cream - 7 fl oz
- Apple - 2 pieces
- Date honey - 1.8 oz
- Spanish onions - 3.5 oz
- Lightly Salted Red Fish - 3.5 oz
- Hot-Smoked Muksun Fillet - 2.8 oz
- Omul - 2.8 oz
- Quail Egg - 5 pieces
- Chives - 0.4 oz
- Borodinsky Bread - to taste
Step by Step guide
Step 1
Remove the crusts from the white bread and soak it in half of the cream.
Step 2
Coat the apples with honey and bake them in the oven for 30 minutes at 356°F.
Step 3
Sauté the onion.
Step 4
Pass the herring, muksun, smoked omul, sautéed onion, peeled baked apples, and soaked bread through a meat grinder.
Step 5
Whip and add the remaining cream.
Step 6
Boil the eggs until they are slightly undercooked.
Step 7
Fry the Borodinsky bread and place the forshmak on top.
Step 8
Garnish with egg and chopped chives.
