Russian Zucchini with Mushrooms
Ingredients
- Young zucchini - 2 pieces
- Onion - 2 heads
- Fresh Mushrooms - 10.6 oz
- Rice - 3.5 oz
- Sour Cream - 3 tablespoons
- Chicken Egg - 1 piece
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Cut the peeled zucchini in half lengthwise and remove the flesh with seeds.
Step 2
Simmer the zucchini halves for 20 minutes in 2 cups of salted water.
Step 3
Boil the champignons for 30 minutes in 2 cups of water, drain the water, cool the mushrooms, and chop them.
Step 4
Dice the onion and sauté it in oil for 5 minutes, then add the mushrooms and fry for another 7 minutes.
Step 5
For the filling, mix the cooked rice, sautéed mushrooms, and onion, add chopped herbs, season with salt and pepper, and mix well.
Step 6
Fill the zucchini halves with the prepared filling, pour the mixture of sour cream and egg over them, and bake in the oven for 15 minutes.
