Description
This salad is the quintessence of freshness. Arugula, Swiss chard, lemon juice, grapefruit, mint—just one of these ingredients is enough to bring spring to your palate. In addition to pomegranate molasses, you can also use pomegranate seeds in this salad. They provide an extra splash of color and flavor. Besides arugula and Swiss chard, you can also use sorrel and corn salad, or any greens with a tangy and slightly bitter profile.
Ingredients
- Arugula - 7.1 oz
- Chard - 7.1 oz
- Raw cane sugar - 0.7 oz
- Lemon - 1 piece
- Grapefruits - 2 pieces
- Fresh Mint - 1.8 oz
- Olive Oil - 1 fl oz
- Spanish onions - 1.8 oz
- Narshehab sauce - 0 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Wash and dry the salad leaves. Separate the grapefruit into edible segments, removing and discarding any bitter or unwanted parts. Tear the edible segments into small pieces using your hands.
Step 2
Combine mint leaves, sugar, the juice of one lemon, three-quarters of the reserved olive oil for this salad, and narsharab sauce in a blender. Season with salt and pepper, then blend until you achieve a green paste.
Step 3
Finely chop the red onion and mix it with grapefruit pieces and mint sauce.
Step 4
Mix the dressing with the salad leaves, drizzle with the remaining olive oil, and season with salt and pepper.
