Ingredients
- Orange Bell Peppers - 2 pieces
- Quinoa - 3.5 oz
- Semi-Smoked Sausage - 7.1 oz
- Mixed salad greens - 2 bunches
- Olive Oil - 4 tablespoons
- Garlic - 3 cloves
- Dijon Mustard - 1 teaspoon
- Malt Vinegar - 1 teaspoon
- Salt - a pinch
- Meyer Lemon Juice - 1 tablespoon
Step by Step guide
Step 1
Wash the bell peppers and remove the seeds.
Step 2
Drizzle the peppers with olive oil and place them in a preheated oven at 392°F for 20 minutes until cooked.
Step 3
Remove the skin from the peppers and cut them into small strips.
Step 4
Cook the quinoa until ready.
Step 5
Cut the bacon into small strips.
Step 6
Fry in a dry, well-heated pan.
Step 7
In a separate bowl, add the mustard.
Step 8
Add salt.

Pour in a tablespoon of lemon juice.
Step 10
Add vinegar and 2 tablespoons of olive oil.

Press the garlic through a garlic press. Mix well.
