Salad with Baked Feta and Walnuts
Ingredients
- Olive Oil - 4½ tablespoons
- Dried Rosemary - 1 teaspoon
- Ground Black Pepper - ½ teaspoon
- Walnuts - 2.8 oz
- Garlic - 1 clove
- Feta cheese - 6.3 oz
- Ocean salt - a pinch
- Meyer Lemon Juice - 3 tablespoons
- Mixed salad greens - 14.8 oz
- Turnips - 2 pieces
- Courgette - 1 piece
Step by Step guide
Step 1
Preheat the oven to 356°F.
Step 2
In a bowl, mix oregano, 2 teaspoons of olive oil, and black pepper. Add diced feta and mix well. Place the cheese on a baking sheet lined with parchment paper and bake in the oven for 10 minutes.
Step 3
Spread the walnuts on another baking sheet and bake in the oven for 3 minutes. Chop them coarsely.
Step 4
In a jar, combine the remaining oil, minced garlic, lemon juice, and salt. Close the lid and shake well.
Step 5
In a large bowl, combine the salad greens, very thinly sliced radishes, and zucchini. Drizzle with half of the dressing and mix well. Top with feta and walnuts, and drizzle with the remaining dressing.
