Ingredients
- Olive Oil - ¼ cup
- Sherry Vinegar - 2 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
- Black rice (imperial) - 1 cup
- Radishes - 14.1 oz
- Ricotta cheese - 2.1 oz
- Roasted Almonds - 1.2 oz
- Chopped dill - 0.7 oz
- Chives - 2 tablespoons
Step by Step guide
Step 1
Combine the oil and vinegar in a small jar with a tight-fitting lid and shake well. Season with salt and pepper to taste.

Can be prepared in advance: the dressing can be made up to 3 days before preparing the salad; store in the refrigerator.

Combine the rice and 1¾ cups of water in a medium saucepan, add salt. Bring to a boil over high heat. Reduce the heat, cover, and simmer for about 45-50 minutes until the rice is tender and has absorbed all the water. Remove from heat, fluff the rice, and let it sit covered for 10 minutes. Allow to cool.
Step 4
Before serving, mix the rice with the radishes and dressing in a large bowl, season with salt and pepper. Add the cheese, almonds, dill, and chives, and mix well.
