Description
Optional additions — candied pecans or pine nuts, dried cranberries, fresh raspberries. Instead of cognac — balsamic vinegar.
Ingredients
- Butter - 1.8 oz
- Brown Sugar - 1.8 oz
- Pears - 6 pieces
- Cognac - 1.8 oz
- Roquefort cheese - 5.3 oz
- Honey - 0.9 oz
- Lemon - 1 piece
- Mild Chili Spice - 1 piece
- Grated Ginger Root - 1 teaspoon
- Olive Oil - 1 fl oz
- Garlic - 2 cloves
- Mixed salad greens - 10.6 oz
Step by Step guide
Step 1
Tear the salad mix by hand (preferably the freshest and organic).
Step 2
Melt the butter with the sugar in a pan, and bring the sugar to a golden color.
Step 3
Add the peeled pears (soaked for about 20 minutes in lemon juice) to the caramel and caramelize them, stirring, until golden.
Step 4
Cut the Roquefort cheese into random pieces.
Step 5
For the dressing, mix the cognac with honey, grated ginger (2 cm — peeled root), garlic, and lemon juice, adding a teaspoon of grated lemon zest. It wouldn't hurt to taste — it should be delicious, of course.
Step 6
On a plate, lightly place the salad mix, then beautifully arrange the pears and cheese on top. Serve the dressing in a separate sauceboat.
