- Red Onion - 2 heads
- Fresh Red Bell Peppers - 6 pieces
- Garlic - 6 cloves
- Extra virgin olive oil - 2 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
- Red Wine Vinegar - 1 tablespoon
- Chicory leaves - 17.6 oz
- Blue Cheese - 2.8 oz

To prepare the salad with onion and pepper, preheat the oven to 230°C. Place the onion, peppers, and garlic on a baking sheet, add olive oil, and mix well. Roast the peppers beforehand.

Season with salt and pepper.

Bake the vegetables, stirring occasionally, until the onion is soft (about 40 minutes), then remove from the oven and mix with vinegar. Season with more salt and pepper, and add more vinegar if desired.
