Salad with Pancetta and Walnuts
Ingredients
- Sourdough Bread - 2 pieces
- Olive Oil - 3 tablespoons
- Pancetta - 4 slices
- Walnuts - 1.2 oz
- Garlic - ½ clove
- Balsamic Vinegar - 2 teaspoons
- Salt - a pinch
- Ground Black Pepper - a pinch
- Tomatoes - 2 pieces
- Oak Leaf Lettuce - 2 bunches
- Parmesan Cheese - to taste
Step by Step guide
Step 1
Toast the bread on the grill on both sides until golden brown. Brush one side of each piece with 1 teaspoon of olive oil. Trim the crust and cut into small cubes.
Step 2
Heat 2 teaspoons of olive oil in a pan over medium heat. Sauté the diced pancetta and slightly chopped walnuts for 2 minutes, stirring constantly.
Step 3
In a jar, mix the remaining olive oil, vinegar, minced garlic, salt, and pepper. Close the lid and shake well.
Step 4
In a large bowl, combine the torn lettuce leaves, diced tomatoes, pancetta, and walnuts. Drizzle with the dressing and mix well. Then add the croutons and sprinkle with Parmesan shavings.
