Salad with Pickled Pak Choi

Ingredients

  • Pak choi salad - 1 head
  • Lemon - 1 piece
  • Carrot - 1 piece
  • Lime - 1 piece
  • Dates - 6 pieces
  • Olive Oil - 3 fl oz
  • Grated Ginger Root - 3 tablespoons
  • Soy Sauce - 3 tablespoons

Step by Step guide

Step 1

In a blender, combine lemon juice, lime juice, dates, ginger, olive oil, and soy sauce.

Step 2

Slice the pak choi leaves into thin strips. Grate the carrot.

Step 3

Pour half of the marinade over the pak choi and carrot and mix well. Add more marinade if desired.
