Salad with red beans, chicken, and croutons

Ingredients

  • Canned Baby Beets - 1 can
  • Canned Corn - 1 can
  • Skin-On Chicken Breasts - 2 pieces
  • Croutons - 1.8 oz
  • Chinese green beans - 1 head
  • Mayonnaise - to taste

Step by Step guide

Step 1

Wash the chicken breasts and boil them until cooked in salted water. Remove, cool, and cut into small pieces about 7-10 mm (if desired, this ingredient can be replaced with white canned beans or omitted altogether; the salad will still be good!).

Step 2

Open the canned goods, drain all the liquid, and transfer the corn and beans to a deep bowl. Add the chicken breast.

Step 3

Separate the leaves of the Chinese cabbage from the head (use as many leaves as you like; if you want a juicier salad, don't be stingy!), cut them lengthwise into 2-3 parts, and then slice into strips about 5 mm thick. Transfer to the same bowl.

Step 4

Mix all the ingredients, and dress with mayonnaise. 20-30 minutes before serving, open a bag of rye croutons (you can choose flavors to your liking; I prefer the bacon flavor), break them into smaller pieces, and add them to the salad, mixing well. If necessary, add more mayonnaise. For garnish, you can sprinkle some croutons and herbs on top. Enjoy your meal!
