Ingredients
- Star anise - 1 piece
- Smoked haddock fillet - 21.2 oz
- Rice Sweet Wine - 3 fl oz
- Peanut Butter - 1 fl oz
- Soy Sauce - 1 tablespoon
- Ginger - 1.8 oz
- Scallions - 3.5 oz
- Sugar - 1 tablespoon
- Sesame Oil - 1 tablespoon
- Lemon - ½ pieces
- Vegetable Oil - 1 tablespoon
- Mixed salad greens - 7.1 oz
Step by Step guide
Step 1
Mix together soy sauce, peanut butter, grated ginger, rice wine (or sake), finely chopped green onion, juice of half a lemon, and sugar. Add star anise to the mixture and pour it over a piece of salmon fillet. Let it marinate in the refrigerator for one hour.
Step 2
After an hour, heat a mixture of refined vegetable oil and sesame oil in a skillet. Remove the fillet from the marinade and pat it dry with paper towels. Slice it into thin pieces and sauté each slice for just a few seconds on each side in the oil mixture. Strain the marinade into the skillet with the remaining hot oil and simmer for a few minutes. Serve the fish on a bed of mixed green salad leaves, drizzled with the sauce.
