Ingredients
- Sour Cream - 1.8 oz
- Bacon - 1.8 oz
- Shallot - 1.4 oz
- Dill - 1.1 oz
- Green Butter - 7.9 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Smoked Salmon Flavored Croutons - 7.9 oz
- Lentils - 4.1 oz
- Dry White Wine - 13 fl oz
- Malt Vinegar - 1 fl oz
- Dijon Mustard - 0 fl oz
- Walnuts - 4 fl oz
Step by Step guide
Step 1
Pour the lentils with wine, add enough water to completely cover them. Bring to a boil, add salt, reduce heat, and let simmer for about 20 minutes (until the lentils are soft). It is important to watch that the lentils do not turn to mush. Remove from heat and let drain in a colander.
Step 2
In a small bowl, whisk the mustard and vinegar until smooth and creamy. Gradually add the walnut oil, first drop by drop, then in a thin stream, constantly stirring. The sauce should resemble a thick cream. Add salt and pepper to taste.
Step 3
Combine the lentils, bacon, and 1/3 of the sauce.
Step 4
Cut the salmon into strips about 10 cm long and 5 cm wide. Add them to the dressed lentils and sprinkle with 2/3 of the dill. Wash and dry the lettuce leaves, tear them into pieces, and mix with ½ of the remaining sauce.
Step 5
Divide the lentils with salmon among 4 plates, placing the lettuce leaves alongside, separated by a decorative stripe of sour cream. Spoon the remaining sauce over the salmon. Sprinkle with the remaining dill.
