Ingredients
- Mixed salad greens - 2.8 oz
- Pancetta - 1.1 oz
- Wild Boar Fillet - 1.4 oz
- Grated Pecorino Pepato Cheese - 0.7 oz
- Sun-Dried Tomatoes - 0.7 oz
- Basil - 0.7 oz
- Olive Oil - 0 fl oz
- Salt - to taste
- Lemon-Pepper Mix - to taste
Step by Step guide
Step 1
Slice the pancetta into small pieces. The wild boar meat is sold pre-sliced. We use aged dried wild boar meat from Italy.
Step 2
Break the cheese into pieces with your hands — it crumbles easily. It will be used to sprinkle on the salad at the end of preparation.
Step 3
Wash and dry the basil and salad leaves. Separate the basil leaves from the stem and chop them finely with a knife.
Step 4
Chop the sun-dried tomatoes finely.
Step 5
Mix the chopped basil with salt, pepper, olive oil, and tomatoes. Keep in mind that some ingredients in this salad are salty on their own, so it's easy to over-salt.
Step 6
Arrange the salad greens in a mound on a flat plate.
Step 7
Drizzle the dressing over the leaves. Try to distribute it evenly. You can lightly toss the salad.
Step 8
Top the salad greens with slices of wild boar meat and pancetta. Sprinkle the salad with pieces of cheese and serve immediately.
