Description
It becomes a completely different story if you replace young cheese with Roquefort or prepare a spicy dressing made of olive oil, thick honey, salt, and reduced balsamic vinegar. Accordingly, the cheese with such a dressing should be as delicate and mild as possible.

- Pears - 1 piece
- Arugula - 3.2 oz
- Homemade Cheese - 1.8 oz
- Clear Honey - 3 tablespoons
- Toasted Pine Nuts - 0.5 oz
- Olive Oil - to taste
- Black Salt - to taste
- Balsamic Vinegar - to taste
Step by Step guide
Step 1
Place the arugula on a plate, drizzle with balsamic vinegar, and set aside.
Step 2
Cut the pear in half and scoop out the seeds with a spoon. Heat honey in a pan over medium heat; once it becomes liquid, add the pear. Let it caramelize on all sides for about eight minutes until it turns a convincing golden color.
Step 3
Place the pear in amber caramel next to the arugula, and add the pine nuts to the pan (directly into the honey) for just a minute. Then place them on the plate as well.
Step 4
Tear the cheese into small pieces with your fingers and add it to the salad. Dress everything with olive oil and garnish with black salt. Bon appétit!
