Ingredients
- Star anise - 5 pieces
- Salmon - 6 lbs
- Olive Oil - 1 fl oz
- Bay leaf - 2 pieces
- Rosemary - 2 stalks
- Thyme - 2 stalks
- Basil - 2 stalks
- Sage - 2 stalks
- Parsley - 2 stalks
- Garlic - 1 head
- Lemon - 1 piece
- Lemon-Pepper Mix - 1 tablespoon
- Lemongrass - 2 stalks
- Ocean salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Gut and wash the salmon. Use kitchen scissors to trim the tail and fins, then pat the fish dry inside and out with a paper towel. Make shallow cuts in the skin on both sides of the fish, about 1–2 cm apart, and rub it with olive oil, salt, and pepper.
Step 2
Separate the garlic into cloves. Cut the lemongrass in half lengthwise and gently crush it with the flat side of a knife.
Step 3
Cut two sheets of foil large enough to wrap the salmon comfortably. Layer them on top of each other, then place bay leaves, herbs, garlic, and lemongrass in the center, followed by the fish on top. Place some of the herbs inside the fish.
Step 4
Cut the lemon into thick slices and sauté in olive oil for two to three minutes, until caramelized. Season with salt and pepper. Place the lemon on the fish, and a few slices inside. Sprinkle the fish with star anise and pepper, then drizzle with olive oil.
Step 5
Preheat the oven to 374°F. Tightly wrap the edges of the foil over the salmon, leaving enough space inside for steam to circulate. Place it in the oven for half an hour. Remove it, let it sit for five minutes, then peel off the skin and separate the flesh from the bones.
Step 6
Serve with slices of caramelized lemon and the sauce from the roasting pan.
