Ingredients
- New Potatoes - 21.2 oz
- Fennel - 1 piece
- Salmon - 17.6 oz
- Parsley - 1 bunch
- Garlic - 2 cloves
- Olive Oil - to taste
- Fresh Mint - 1 bunch
- Grated Pecorino Pepato Cheese - 3.5 oz
- Citrus Zest Mix - a pinch
Step by Step guide
Step 1
Cut the potatoes in half, and trim the fennel stalks (they will be needed for garnish). Place in boiling salted water for 6 minutes.
Step 2
Let the vegetables dry for a couple of minutes, then transfer them to a baking dish, season well with salt and pepper, add finely chopped garlic and half of the parsley. Preheat the oven to 428°F. Bake for about 30 minutes.
Step 3
Make cuts about 1 cm deep on the salmon pieces. Rub with mint and the remaining parsley. When the potatoes are golden brown, remove them from the oven and sprinkle with Parmesan. Then place the salmon pieces skin side up on top, sprinkle with lemon zest, drizzle with olive oil, and cook for another 15 minutes.
Step 4
Serve with lemon wedges.
