Ingredients

  • Smoked haddock fillet - 14.1 oz
  • Worcestershire Sauce - 1 tablespoon
  • Leek - 1.1 oz
  • Smoked salt - 1 tablespoon
  • Yellow Cherry Tomatoes - 4 pieces
  • Dried onion powder - 1 tablespoon
  • Spanish onions - 1 head
  • Garlic - 1½ cloves
  • Cilantro - 1 tablespoon
  • Champagne Vinegar - 1 tablespoon
  • Olive Oil - 1 tablespoon
  • Mayonnaise - 7.1 oz
  • Orange juice concentrate - 1 fl oz
  • Ground Black Pepper - 1.4 oz
  • Cheese Spread - 8 pieces
  • Hamburger Bun - 8 pieces
  • Corn Salad - 8 pieces
  • Safflower Oil - to taste
  • Salt - to taste
  • Ground ancho chili pepper - 1 tablespoon

For the chipotle mayonnaise, combine mayonnaise, finely chopped red onion (half of a medium onion), orange juice, minced garlic clove, and chipotle seasoning. Season with salt to taste. You can mix by hand, but it's easier with a blender.

For the tomato salsa, remove the seeds from the tomatoes and dice them into small cubes. Finely chop half of a red onion. Grate half a clove of garlic. Mix the onion, tomatoes, and garlic with cilantro, and dress with red wine vinegar and olive oil.

Grind three-quarters of the salmon into a fine mince using a meat grinder, and chop the remaining portion into small cubes. Add Worcestershire sauce, chopped onion, onion powder, and smoked paprika, seasoning with salt to taste. Mix thoroughly until you achieve a dense, uniform mixture.

Shape the ground meat into eight small patties. Fry them in sunflower oil on a grill pan for one minute on each side.

Slice the buns in half and spread chipotle mayonnaise on both halves. Place a lettuce leaf on the bottom halves. Then, add a fish patty with a slice of cheese (Jarlberg), top the cheese with salsa, and cover with the top halves of the buns. Serve with French fries—or enjoy them on their own.
