Ingredients
- Honey - 14.1 oz
- Fresh Rose Hips - 0.4 oz
- Lemon - 2 pieces
- Smoked haddock fillet - 1⅕ kg
- Olive Oil - 1 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Cut the fillet into 4 pieces, each weighing 170 grams. Pour the honey into a small saucepan and heat it over medium heat for three minutes. Add the fresh rosemary leaves and lemon zest, then stir. Remove from heat and let it sit for fifteen minutes, then strain through a sieve into a clean bowl and allow to cool completely.
Step 2
Place the fish pieces skin-side down in a deep dish, season with salt and pepper, and drizzle each piece with two tablespoons of the honey mixture. Cover the dish with plastic wrap and refrigerate for one hour.
Step 3
Preheat the grill and brush the grates with olive oil, then place the fish on the grill and cook for two to three minutes on each side.
Step 4
Transfer the cooked fish to serving plates and drizzle with lemon juice.
