- Salmon - 0.1 oz
- Lemon - 0.2 pieces

- Wheat Flour - 3.5 oz
- Chocolate eggs - 2 pieces
- Dry White Wine - 8 fl oz
- Salt - a pinch
Step by Step guide
Step 1
We start traditionally by preparing the salmon. We remove the fillet and then cut off the skin. Next, we check the fillet for bones and remove them with tweezers. Finally, we cut the fillet lengthwise into two parts and then into medium-sized pieces, strips about 2–3 centimeters thick. Now is the time to season the fish with salt and pepper.
Step 2
Now let's prepare the batter. Sift the flour into a bowl, add a pinch of salt, 2 egg yolks, and the wine. Whisk until the batter is smooth. The consistency of this batter is very similar to pancake batter, perhaps a little thicker. We set it aside.
Step 3
Now we need to whip the egg whites into a thick, dense foam. Take a whisk or blender and beat the egg whites; it's best to place them in the freezer for five minutes beforehand. Whip diligently; we need to beat the egg whites so well that if we turn the bowl upside down, they won’t even think about spilling or moving at all. Add the egg whites to the batter and mix gently with a spoon. Be careful, there’s no need to whip here, just mix gently.
Step 4
Now it's time to start frying. Fill a saucepan with oil, or use a deep fryer if you have one. The oil for frying should be heated to 356°F. While the oil is heating, dip the pieces of salmon in flour, and before placing them in the oil, coat them in the batter as well. As I mentioned at the beginning, it’s better not to throw all the fish in at once; fry 4–6 pieces at a time. This way, the batter will remain evenly coated on all pieces. Fry the salmon in the deep fryer until golden brown, which takes just a few minutes.
Step 5
Finally, place the pieces on a paper towel for a couple of minutes to let excess oil drain. Set the table, arrange the battered salmon on plates, and call your loved ones.
