Ingredients
- Smoked haddock fillet - 17.6 oz
- Ocean salt - 2 tablespoons
- Water - 1 fl oz
- Sugar - 1.8 oz
- Frozen black currant puree - 10.6 oz
Step by Step guide
Step 1
Rinse the salmon fillet, cut it into four portions, and rub with sea salt. Wrap the fish in plastic wrap and refrigerate for 12 hours.
Step 2
For the marinade, boil water with sugar, and mash the currants into a puree. Mix the puree into the syrup and let it cool.
Step 3
Remove the salmon from the refrigerator, unwrap it, and clean off the salt. Cover with the currant marinade, wrap in clean plastic wrap, and leave in the refrigerator for 12 hours.
Step 4
Before serving, unwrap the fish, remove the currant marinade, and cut into thin slices.
