Ingredients

  • Dried Rosemary - 2 teaspoons
  • Olive Oil - 2 teaspoons
  • Garlic - 2 cloves
  • Meyer Lemon Juice - 1 teaspoon
  • Coarse Salt - ½ teaspoon
  • Grated Lemon Zest - 1 teaspoon
  • Ground Black Pepper - ¼ teaspoon
  • Smoked haddock fillet - 17.6 oz
  • Marinated cherries - 14.1 oz

Step by Step guide

Step 1

Preheat the grill or barbecue.

Step 2

In a bowl, mix the chopped rosemary, olive oil, minced garlic, lemon zest and juice, salt, and pepper. Add the fish cut into small pieces and mix well.

Step 3

On skewers, alternate threading cherry tomatoes and pieces of fish.

Step 4

Place on the grill and cook, carefully turning, for 4–6 minutes until cooked through.
