Ingredients
- Smoked haddock fillet - 2.1 oz
- Radish - 0.5 oz
- Avocado - 1.8 oz
- Mirin - 0 fl oz
- Scallions - 0.1 oz
- Meyer Lemon Juice - 0 fl oz
- Soy Sauce - 0 fl oz
- Sitimy spice blend - 0 oz
Step by Step guide
Step 1
Place the avocado flesh in a blender, add mirin, lemon juice, and green onions. Blend until smooth. Taste and add salt and pepper to your liking.
Step 2
Using a ring mold, place the puree in the center of the plate where you will serve the dish.
Step 3
Dice the salmon fillet into small cubes and place it on top of a "bed" of avocado.
Step 4
Slice the radishes very thinly into rounds (it's convenient to use a special grater for this), place them in icy water, then drain them onto a folded paper towel to dry.
Step 5
Drizzle the tartare on a bed of avocado with soy sauce and garnish with radish "petals."
