Salmon with Carrot Salad
Ingredients
- Smoked haddock fillet - 14.1 oz
- Fish Oil - 17 fl oz
- Carrot - 1 piece
- Capers - 1 tablespoon
- Scallions - 2 pieces
- Marinated cherries - 4 pieces
- Olive Oil - 3 fl oz
- Meyer Lemon Juice - 1 fl oz
- Mustard Greens - 1 teaspoon
- Garlic - 2 cloves
Step by Step guide
Step 1
Mix the ingredients for the "vinaigrette" sauce (olive oil, lemon juice, mustard, finely chopped garlic) in one bowl, season with salt and pepper.
Step 2
Cut the salmon into thick slices. Bring the fish broth to a boil and add the pieces of salmon. Cook the fish in the broth until done, about 3 minutes. Remove the salmon from the boiling broth and place it in a bowl. Pour about half of the prepared vinaigrette sauce over it. Marinate the salmon for about 30 minutes.
Step 3
Combine the carrot (previously cut into strips), capers, and green onions. Pour the remaining vinaigrette sauce over it.
Step 4
Distribute the carrot mixture onto plates, top with pieces of salmon and wedges of tomatoes.
