Salmon with Fragrant Pineapple-Cucumber Salsa

Ingredients

  • Honey - 1 tablespoon
  • Lime Juice - 2 tablespoons
  • Vegetable Oil - 3 tablespoons
  • Pineapple - 3.5 oz
  • Cucumbers - 2 pieces
  • Green onion tops - 2 pieces
  • Habanero Pepper - 1 piece
  • Fresh basil leaves - ¼ cup
  • Coarse Salt - to taste
  • Ground Black Pepper - to taste
  • Salmon bellies - 4 pieces

Step by Step guide

Step 1

In a small bowl, mix lime juice, honey, and 1 tablespoon of oil. Add peeled and finely diced cucumbers, diced pineapple, finely chopped onion, minced jalapeño, and finely chopped basil. Season with salt and pepper, and mix well.

Step 2

Preheat the grill or barbecue.

Step 3

Season the fish with salt and pepper. Brush with oil and place on the grill, skin side down. Grill until cooked through and golden brown, turning occasionally.

Step 4

Place the fish on plates and top with the salsa.
