Ingredients
- Dill - 0.9 oz
- Scallions - 0.9 oz
- Olive Oil - 0.3 cup
- Pistachios - 2.6 oz
- Orange Bell Peppers - 2 pieces
- Garlic - 1 clove
- Snap Peas - 15.9 oz
- Water - ¼ cup
- Smoked haddock fillet - 4 pieces
Step by Step guide
Step 1
In a small bowl, mix finely chopped dill, finely chopped green onion, pistachios, and 0.25 cup of olive oil. Season with salt and pepper to taste.
Step 2
Heat 0.5 tablespoons of olive oil in a large skillet over medium heat. Add the sliced peppers and sauté for 2 minutes. Then add the peas, minced garlic, and water. Season with salt and cook for another 2-3 minutes until the vegetables are tender and the water has evaporated. Add 1 tablespoon of the prepared pesto. Stir, transfer to a plate, and cover with foil. Keep warm.
Step 3
In the same skillet (not washed), heat the remaining olive oil over medium heat. Season the fish with salt and pepper and place it in the skillet, skin side down. Cook for about 3 minutes, flip, and cook for another 3 minutes until the fish is opaque.
Step 4
Place the fish on the vegetables and top each piece with a small amount of pesto. Serve.
