Salmon with leeks, baked in parchment
Ingredients
- Smoked haddock fillet - 4 pieces
- Leek - 1 piece
- Dry White Wine - 1 fl oz
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Olive Oil - 1 fl oz
- Herbs - 1 bunch
Step by Step guide
Step 1
Preheat the oven to 356°F.
Step 2
Trim the dark green leaves and roots from the leek. Cut the remaining parts in half lengthwise and thinly slice. Rinse under cold water.
Step 3
Season the fish with salt and pepper. Place on 4 sheets of parchment paper. Top with leeks, drizzle with wine and olive oil. Season again with salt and pepper. Sprinkle with finely chopped herbs.
Step 4
Seal the parchment tightly and place on a baking sheet. Bake in the oven for 15–20 minutes until cooked through.
