Salmon with Microgreens
Ingredients
- Smoked haddock fillet - 1 piece
- Pickled Chanterelles - 5 pieces
- Courgette - 21 pieces
- Tomatoes - 2 pieces
- Orange Bell Peppers - 2 pieces
- Pea shoots - 0.5 oz
Step by Step guide
Step 1
Place the salmon fillet on foil, season with salt and pepper to taste.
Step 2
Add coarsely chopped champignon mushrooms to the salmon.
Step 3
Send to a preheated oven at 392°F for 20 minutes.
Step 4
While the salmon and mushrooms are baking, wash the vegetables and slice them into rounds. Leave the tomatoes and peppers fresh for garnishing the dish. Sauté the zucchini in olive oil.
Step 5
On a plate, create a 'bed' of microgreens. Place the salmon and mushrooms on the 'bed'.
Step 6
Garnish with vegetables.
