Salmon with Mint Salsa
Ingredients
- Olive Oil - ⅓ cup
- Smoked haddock fillet - 28.2 oz
- Fresh Mint - 2.5 oz
- Chopped Sage Leaves - ½ cup
- Basil - ¼ cup
- Young Spinach "Belaya Dacha" - ¼ cup
- Pickled capers - 1 tablespoon
- Anchovy fillet - 2 pieces
- Red Wine Vinegar - 1 tablespoon
- Citrus Zest Mix - ½ teaspoon
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
For the salsa, wash the herbs and pluck the leaves. Place the herbs, capers, anchovies, vinegar, and lemon zest in a blender and blend. Pour in ⅓ cup of olive oil and mix well. Season with salt and pepper to taste.
Step 2
Heat 2 teaspoons of olive oil in a skillet. Cut the salmon fillet into 200-gram pieces and pat dry with a paper towel. Season well with salt and pepper and place in the hot skillet, skin side down. Sear for 5 minutes. Flip the fish and cook for another 1–2 minutes or until done, to your liking.
Step 3
Serve immediately with a generous spoonful of salsa and a fresh green salad.
