- Smoked haddock fillet - 4.2 oz
- Cucumbers - 0.5 oz
- Nigella Seeds - 0 oz
- Tiger shrimp in brine - 1 piece
- Salad Potatoes - 3.5 oz
- Chicken Egg - 1 piece
- Parmesan Cheese - 0.4 oz
- Pickled Chanterelles - 1.1 oz
- Shallot - 0.1 oz
- Breadcrumbs - 0.7 oz
- Thyme - 1 piece
- Ocean salt - to taste
- Ground Black Pepper - to taste
- White Balsamic Cream - 0 fl oz
- Pesto - 0 fl oz
Step by Step guide
Step 1
Season the salmon fillet with salt, pepper, sprinkle with fennel seeds, roll it up, and fry on both sides. Place in the oven for 4-5 minutes.
Step 2
Grate the cucumbers on a fine grater, add olive oil, salt, and pepper. Mix well.
Step 3
Boil the potatoes, pass them through a sieve, add salt, pepper, egg, grated Parmesan cheese, and mix. Separately sauté the onion and mushrooms in olive oil.
Step 4
Prepare the croquettes by filling them with mushrooms, breading in egg and breadcrumbs twice. Fry in hot oil for 3-4 minutes.
Step 5
Place the croquettes on a plate, top with salmon, drizzle with cucumber dressing, and add the sautéed shrimp on top. Garnish with balsamic sauce, red pesto, and thyme.
