Ingredients
- Oranges - 1 piece
- Butter - 0.7 oz
- Pea purée - 5.3 oz
- Orange Bell Peppers - 5.3 oz
- Smoked haddock fillet - 10.6 oz
- Quinoa - 3.5 oz
- Green Peas - 1.8 oz
Step by Step guide
Step 1
Preheat the oven to 356°F.
Step 2
Rinse the quinoa and cook it in salted water for 20 minutes, remove from heat and stir in half of the butter.
Step 3
Season the salmon with salt and pepper. Heat 2–3 tablespoons of vegetable oil in a pan and sear the fish over high heat for 2 minutes on each side, then transfer it to the oven for 7–10 minutes.
Step 4
Finely chop the bell pepper and cut the orange into wedges. In a saucepan, warm the pea purée.
Step 5
In the pan, heat the remaining butter and sauté the bell pepper, peas, and oranges until golden brown, then add the quinoa and heat together for 1–2 minutes over medium heat. On a plate, arrange the quinoa, fish, garnish with orange wedges, and serve with sauce.
