Ingredients
- Smoked haddock fillet - 28.2 oz
- Lemon - 2 pieces
- Garlic - 8 cloves
- Courgette - 21.2 oz
- Canned Tomatoes (Pelati) - 14.1 oz
- Parsley - 0.7 oz
- Thyme - 4 stalks
Step by Step guide
Step 1
Divide the salmon fillet into four portions of approximately 200 grams each and marinate for about ten minutes in the juice of two lemons, thyme, and four crushed garlic cloves.
Step 2
Dice the zucchini into small cubes and finely chop the remaining garlic. Sauté the vegetables with a small amount of water for five minutes, then add the canned tomatoes along with their juice and simmer for another five minutes. Finely chop the parsley, add it to the vegetables, and remove from heat.
Step 3
In a hot dry skillet, sear the salmon fillet for four minutes on one side and three minutes on the other.
Step 4
Serve the salmon on a bed of zucchini and tomatoes.
