Salmon with Zucchini Baked in Parchment

Ingredients

  • Shallot - 1 piece
  • Young zucchini - 1 piece
  • Butter - 1 tablespoon
  • Lemon - ¼ piece
  • Dried Dill Stems - ¼ teaspoon
  • Coarse Salt - to taste
  • Meyer Lemon Juice - 2 teaspoons
  • Ground Black Pepper - to taste
  • Smoked haddock fillet - 7.1 oz

Step by Step guide

Step 1

Preheat the oven to 356°F. Grease a sheet of parchment paper with butter.

Step 2

Cut the zucchini in half lengthwise and then into thin slices. Arrange them in a single layer on the parchment. Then add the thinly sliced shallot, butter, dill, and lemon slices. Season with salt and pepper.

Step 3

Place the fish on top of the vegetables, drizzle with lemon juice, and season with salt and pepper.

Step 4

Fold the parchment tightly and secure it.

Step 5

Place in the oven for 15-20 minutes until cooked through.

Step 6

Gently unfold the parchment and serve immediately.
