Ingredients
- Salt - 2 lbs
- Tarragon - 6 stems
- Lemon - 4 pieces
- Sea Bass - 1 piece
- Olive Oil - to taste

Step 1
Place the salt in a baking dish and heat in the oven at 212°F for 15 minutes.
Step 2
Remove the salt from the oven and increase the temperature to 428°F.
Step 3
Spread one third of the warm salt evenly on the baking sheet.
Step 4
Place 2 lemon slices and 3 sprigs of tarragon on top of the salt.
Step 5
Put the fish on the bed of salt. Top with the remaining lemon and tarragon.
Step 6
Cover everything with salt, pressing it tightly against the fish. It is essential that the fish is completely covered with salt.
Step 7
Bake for 10–12 minutes. You can check if the fish is done by piercing the salt crust with a knife and reaching the flesh.
Step 8
Before serving, remove the salt crust, separate the fillet from the bones, and drizzle with olive oil.
