Ingredients
- Lightly Salted Red Fish - 12.3 oz
- Cotton Oil - 7 tablespoons
- Salad Potatoes - 17.6 oz
- Onion - 3 heads
- Chocolate eggs - 4 pieces
- Salt - to taste
Step by Step guide
Step 1
Cut the cod into pieces, rinse under cold water, and set aside.
Step 2
In a heated skillet with corn oil at 180–374°F (to check, you can use a cube of yesterday's bread: at this temperature, it should brown within 30 seconds), fry the sliced potatoes in small batches for a few minutes until golden brown. Then remove them from the skillet with a slotted spoon, allowing excess oil to drain, and set aside.
Step 3
Leave 4–5 tablespoons of oil in the skillet, drain the rest, and heat again. Add the sliced onions and cook, stirring occasionally, over low heat for about 8 minutes until the onions take on a slightly brown hue. Then add the cod and cook for another 5 minutes until the fish is browned.
Step 4
Crack the eggs directly into the skillet and quickly stir as if making scrambled eggs. When the eggs are slightly set, add the potatoes to the skillet. Lightly season the mixture with salt, stir quickly, and transfer to a warmed plate. Serve immediately.
