Description
Satsbelis translates from Georgian simply as 'sauce'; this dressing is a staple in Georgian cuisine. It is made only from the ripest, sweetest, seasonal tomatoes. It pairs well with roasted chicken, meat stews, and fish. Satsbelis is served with any hot dish and is even spread on bread.
Ingredients
- Tomatoes - 4 lbs
- Red Long Chili Peppers - 0.4 oz
- Uchiko Suneli - 0.2 oz
- Khmeli-suneli - 0.2 oz
- Ground coriander - 0.2 oz
- Cilantro - ½ bunches
- Salt - to taste
Step by Step guide
Step 1
Wash the tomatoes thoroughly.
Step 2
Remove the green stems and place them in a pot.
Step 3
Cover the tomatoes with water so that they are completely submerged.
Step 4
Bring to a boil, then immediately reduce the heat to low and simmer the tomatoes for about an hour, until they become soft and break down. Be sure not to let them burn!
Step 5
Remove the tomatoes from the heat.
Step 6
Let it cool completely.
Step 7
Pass the tomatoes through a fine sieve to remove the skins and seeds.
Step 8
Add ground red pepper, ucho-suneli, khmeli-suneli, and crushed coriander to the mixture to taste.
Step 9
Season with salt.
Step 10
Before serving, garnish with finely chopped cilantro.
