Sautéed Spinach with White Beans and Mozzarella
Ingredients
- Canned White Beans - 1½ cups
- Red Bell Pepper - 2 pieces
- Mozzarella Cheese - 4.2 oz
- White vinegar - 2 tablespoons
- Tomato Paste - 6 tablespoons
- Olives - ¼ cup
- Shallots - 2 heads
- Chopped Parsley - 2 tablespoons
- Minced garlic - 4 cloves
- Garlic Oil - 1 tablespoon
- Young Spinach - ½ kg
Step by Step guide
Step 1
In a medium bowl, combine the white beans, bell pepper, mozzarella, 1 tablespoon of vinegar, and 1 tablespoon of sun-dried tomato oil. Let it sit.
Step 2
In a small bowl, mix the sun-dried tomatoes, olives, parsley, and garlic with the remaining 1 tablespoon of vinegar. Stir and pour into the bowl with the beans. Let it sit.
Step 3
To prepare the garlic spinach: Heat the oil in a skillet over medium heat.
Step 4
Add the bell pepper and shallots to the skillet, sauté for 3–5 minutes or until the vegetables begin to brown. Add the garlic and sauté for another 30 seconds or until fragrant.
Step 5
Gradually add the spinach and sauté for 5–6 minutes, tossing with tongs, or until the spinach is wilted and bright green.
Step 6
Add salt and pepper to taste.
Step 7
Serve the salad topped with the garlic spinach.
