Ingredients
- Scallops - 12 pieces
- Peanut Butter - 2 tablespoons
- Garlic - 2 cloves
- Scallions - 1 bunch
- Ground ancho chili pepper - 1 piece
- Black Tomatoes - 3 tablespoons
- Soy Sauce - 2 tablespoons
- Brown Sugar - 2 teaspoons
- Corn Starch - 2 teaspoons
- Chicken Broth - 3 tablespoons

Step 1
Place the scallops shell-side down on a sieve, place it over a pot of boiling water, cover with a lid, and cook for 6 minutes.
Step 2
Meanwhile, finely chop the garlic, onion, and chili, soak the beans in cold water for 20 minutes, and then dry them.
Step 3
Heat the oil in a wok, add the garlic, onion, chili, and black beans, and stir-fry for 2 minutes, crushing the beans.
Step 4
Next, pour in the soy sauce, add the sugar, and continue to simmer for 1–2 minutes.
Step 5
Mix the broth with the cornstarch and bring to a smooth consistency.
Step 6
Add the resulting mixture to the pan, bring to a boil, and simmer until the sauce thickens.
Step 7
Keep the sauce warm. Arrange the scallops on warmed plates and drizzle with the sauce.
