Ingredients
- Olive Oil - 3 tablespoons
- Leek - 1 piece
- Green Papaya - 17.6 oz
- Chicken Broth - 0.3 cups
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Scallops - 17.6 oz
- Lemon - 1 piece
Step by Step guide
Step 1
Trim the dark green leaves and roots from the leek. Cut the remaining parts in half lengthwise and slice thinly. Rinse under cold water. Thinly slice the cabbage.
Step 2
Heat 4.5 teaspoons of olive oil in a large skillet over medium heat. Add the leek and sauté for 1-2 minutes. Then add the cabbage and broth. Cook until tender, about 5 minutes, season with salt and pepper.
Step 3
Season the scallops with salt and pepper.
Step 4
Heat the remaining olive oil in the skillet over high heat. Add the scallops and sear for 4 minutes on each side.
Step 5
Plate the cabbage and top with the scallops. Serve with lemon wedges.
