Ingredients
- Scallops - 16 pieces
- Butter - 1 tablespoon
- Garlic - 1 clove
- Vegetable Oil - 1 tablespoon
- Grated Ginger Root - 1 tablespoon
- Scallions - 1 bunch
- Mild Chili Spice - 1 piece
- Citrus Zest Mix - 5.3 oz
- Lime Juice - 3 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Trim the scallops and remove the black veins. Rinse and dry them on paper towels. Separate the shell from the white flesh and cut the flesh in half into two rounds.
Step 2
Finely chop the green onions, crush the garlic clove, and grate the ginger and zest. Then, remove the seeds from the chili and chop it very finely.
Step 3
Heat the oil in a skillet. Add the garlic and ginger and cook for 1 minute. Then add the green onions and continue to sauté over high heat for about 1 minute.

Add the scallops to the skillet. Cook over high heat for 5 minutes.
Step 5
As a final touch, add the zest and lime juice to the skillet and cook for another 1 minute.
Step 6
Serve the dish hot with the juices from the skillet, boiled rice, and garnish with lime wedges.
