- Morels - 2.5 oz
- Scallops - 2.5 oz
- Sweet Red Onion - 0.9 oz
- Cream 22% - 3 fl oz
- Chicken Broth - 5 fl oz
- Ramsons - 0 fl oz
- Whole egg - 1 piece
- Chicken Egg - 1 piece
- Limoncello - 1 fl oz
- Meyer Lemon Juice - 3 fl oz
- Powdered Sugar - 3.5 oz
- Butter - 4.2 oz
- Salt - 0.1 oz
- Lemon - 1 piece
- Ramsons - 3.5 oz
- Vegetable Oil - 5 fl oz
Step by Step guide
Step 1
Lemon Mousse: In a double boiler at 149°F, mix the yolk, egg, limoncello, lemon juice, powdered sugar, butter, and salt. Whisk until smooth.
Step 2
Lemon Powder: Cut the lemon in half, char it on a grill or skillet until blackened, dry it into chips, and grind into powder.
Step 3
Ramson Oil: Blend ramson with vegetable oil.
Step 4
Rinse and dry the morels. Sauté the scallops and add cream with vegetable broth. Roast the onion in foil and cut it in half.
Step 5
Plate the scallops with morels, drizzle with ramson oil. Serve with lemon mousse and sprinkle with lemon powder.
