The Scandinavian Burger is a delightful combination of flavors inspired by the Nordic region. This burger features a juicy beef patty topped with creamy dill sauce, crunchy pickles, and fresh arugula, all nestled between two toasted brioche buns.   • Bacon - 2 pieces
  • Veal Tenderloin - 10 oz
  • Cheshire Cheese - 0 oz
  • Pickled Cauliflower - 2 pieces
  • Iceberg Lettuce - 3 bunches
  • Tomatoes - ½ pieces
  • Spanish onions - ½ heads
  • Sesame bun - 1 piece
  • Spanish onions - ⅓ heads
  • Olive Oil - 1 tablespoon
  • Ketchup - 1½ spoons
  • HP Brown Sauce - 1 tablespoon
  • Mayonnaise - 2 spoons
  • TABASCO® - 1 tablespoon
  • Worcestershire Sauce - ½ spoons
  • Cognac - 1½ spoons
  • Salt - to taste
  • Ground Black Pepper - to taste

Pass the beef through a meat grinder, add oil, a tablespoon of ketchup, and season with salt and pepper. Mix by hand (using a food processor will result in a fibrous texture) until well combined. Shape the patty: fill a cooking ring with the mixture and press down firmly.

Finely chop the pickled cucumber and mince the white onion. Combine the cucumber and onion with mayonnaise, half a tablespoon of ketchup, HP sauce, Tabasco, and Worcestershire sauce. Add the main ingredient — cognac.

Slice half of the tomato and the red onion into thin rings. Carefully shape the iceberg lettuce leaves into a boat, trying not to damage them. Lay the tomato and red onion slices on top of the salad, gently pressing them down with your hands.

Grill the meat, bun, and bacon (a grill pan works too). The bun only needs about thirty seconds to brown, the bacon should be cooked for about thirty seconds on each side, and medium doneness for the meat will take about four to five minutes. One minute before it's done, place cheese on the patty and let it melt.

On one half of the toasted bun, place a boat of salad with slices of tomato and onion, drizzle with two to three tablespoons of sauce, then add the patty topped with cheddar cheese and bacon, and cover it with the other half of the bun. For garnish, serve a pickle cut into four pieces alongside the hamburger.
