Ingredients
- Sea Bass - 2 pieces
- White bread - 5.3 oz
- Lemon - 1 piece
- Onion - 1.8 oz
- Raisins - 1.8 oz
- Olives stuffed with lemon - 1.8 oz
- Capers - 0.7 oz
- Red Curry Powder - 0 oz
- Garlic - 2 cloves
- Pistachios - 1.1 oz
- Rosemary - 0.1 oz
- Olive Oil - 1 fl oz
- Ocean salt - 0.2 oz
Step by Step guide
Step 1
Peel and finely chop the onion and garlic; crush the olives and remove the pits.
Step 2
Cut the crust off the bread and crumble the flesh in a food processor; zest half of the lemon and squeeze the juice from half of the lemon.
Step 3
Sauté the onion and garlic over medium heat in olive oil for 2 minutes, stirring constantly, then add the olives, capers, pine nuts, rosemary leaves, raisins, and curry, and sauté for another 2 minutes.
Step 4
Add the bread crumbs and lemon zest to the pan, mix, sauté for another minute, and remove from heat.
Step 5
Wash the fish, dry it with a paper towel, rub the outside and inside with black pepper and sea salt, and fill it with the stuffing (leave 1/3 of the stuffing); place the fish on a baking sheet, sprinkle with the remaining stuffing, and drizzle with lemon juice and olive oil.
Step 6
Bake the fish in a preheated oven at 356°F for 13–14 minutes.
Step 7
Plate the fish, add the garnish, and serve.
