- Mixed salad greens - 1.1 oz
- Chilean sea bass fillet - 7.1 oz
- Butter - 1.1 oz
- Celery salt - 0 oz
- Lemon-Pepper Mix - 0 oz
- 10% cream - 2.8 oz
- Fish Oil - 1.4 oz
- Shallot - 0.7 oz
- Arugula - 0.4 oz
- Goat cheese - 1.6 oz
- Tomatoes - 0.7 oz
Step by Step guide
Step 1
Remove the sea bass fillet, leaving the skin on.
Step 2
Use tweezers to remove the side bones.
Step 3
Finely chop the shallot with a knife.
Step 4
Season the fish fillet with salt. Heat the butter without overheating.
Step 5
Sear the fish first on the fillet side, then flip it onto the skin.
Step 6
Sprinkle the shallots in the butter around the fish. Continue to fry everything together until the shallots are soft.
Step 7
Remove the fish.
Step 8
Add pieces of cheese and stock to the shallots in the butter. Stir until smooth, then pour in the cream. Bring to a simmer.

Place the fish in the sauce, skin side down. Simmer until the sauce slightly thickens. Stir in the arugula.
Step 10
On a plate, arrange the mixed salad and sliced tomatoes.
Step 11
Place the fish fillet on top. Drizzle with sauce. Sprinkle the dish with freshly ground pepper mix.
